Potato, sausage, and green bean bake

We are fans of great tasting food.  We are also fans of quick, great tasting food.  While this one may not cook quickly, it preps quick enough to make up for it.  Sometimes, we get it ready the night before, and place foil over the top of the pan, and put it in the fridge.

First, dice your favorite potatoes, skinned or still in the skin. This will be a small bag.  Place them in a large mixing bowl and mix with a small amount of olive oil.  Then mix in your favorite blend of spices.  We use black pepper and seasoning salt.

Place these in an even layer on the bottom of a 9×13 pan.  We’ve used glass and metal and get the same results.

Take a one pound package of summer sausage and thinly slice it and place this on top of the potatoes.

Next, open two cans of green beans and drain the juice.  Add the green beans to the top of this dish.

Cover with foil and place in the oven for 30 minutes at 425 degrees.  After that time, remove the foil, give it a good stir and bake uncovered for another 10 to 15 minutes. Or until the potatoes are done.

There really isn’t much left to go with this dish, unless you add some buttered bread or rolls as a side.  We like this one because its fairly quick for busy school days but you still want a hearty, home cooked meal.
